We were in need of a new dip. We have done hummus and baba ganoush to death and I think I have even exhausted our favourite pumpkin dips. I have an excess of carrots at the moment (they were a really good price at the markets this week), so I decided to try out a carrot themed dish. Given we all love honeyed carrots as a side, this is what I came up with. Hope you enjoy it!
Honeyed Carrot Dip
This dip was inspired by honeyed carrots, which our family love! It has macadamias to make it more filling and a variety of complimentary flavours that I think provide a good balance. You could also add herbs to this dip such as parsley, coriander or dill.
Ingredients
- 500g roughly chopped carrots
- 1 cup macadamia nuts - you can also use cashews if you like
- 1 clove garlic
- 1/4 cup water
- 3 tsp ground cumin
- 2 tbsp raw honey - 15ml tablespoon
- 60ml cold pressed olive oil
- 1/2 tsp sea salt
- Juice of one lemon - or to taste
Instructions
- Steam or boil the carrots until soft.
- Add the carrots and all remaining ingredients to a food process and mix until smooth.
- Serve with crackers and vegetable sticks.
