With summer beginning tomorrow, I thought it was time for a refreshing dip recipe. To be honest it feels like it has been summer for over a month in Brisbane so this one is well and truly tried and tested. It could even be an addition to your pre-lunch snacks on Christmas day!
Minted Pea and Cashew Hummus

This is a hummus-inspired dip and yet it is quite far from the original version made with chickpeas. I used peas and cashews as a base and added mint, a great friend of peas! You also may wish to add a small clove of garlic. I couldn't as I was all out.
Ingredients
- 1 cup green peas - fresh or frozen
- 1 cup raw, unsalted cashews
- 1 tbsp tahini - equal to 3 teaspoons
- 1 tsp ground cumin
- 1/2 tsp sea salt
- Juice of one lemon - or to taste
- 2 tbsp olive oil - equal to 6 tsp.
- 1/4 cup water
- a handful of fresh mint leaves
Instructions
- Whizz all ingredients in a blender until smooth.
- Taste and adjust salt or lemon juice if required.

Really enjoyed this dip. Tasted different from any other dips I have tried and was a great way to get protein into the family at snack time rather than filling up on carbs as they usually do. The lemon and mint give it such an amazing flavour!
