This one is for those hot summer days – especially when the kids get home from school eager for something cold. Instead of juicing your fruit, blend it into a smoothie with mineral or coconut water. This way, they get the goodness of the fibre in the fruit as well as the other nutrients. The body is better able to deal with fructose when it comes from the whole fruit.
Pink Drink
This is a special blend of fruits that creates a healthy version of a soft drink or cordial. Perfect for a hot day and more filling than your average beverage. Other additions that taste good are a small slice of ginger or a handful of mint leaves. This will serve 3-4 people, depending on serving size. It is enough for our family of 4.
Ingredients
- 1 cup frozen mixed berries
- 1 orange, peeled, chopped and de-seeded
- 300g chopped pineapple - use the acid free kind for the sweetness
- 2 cups sparkling mineral water or coconut water
Instructions
Place all ingredients into a blender or food processor and whizz until smooth. The drink will go frothy from the pineapple and will have a bit of a fizz if you use the mineral water.
