Herb salt is an invaluable condiment. It can lift a simple snack to a whole new level. Add it to avocado on crackers or toast, eggs, garlic bread, meals or dips. You can choose what you add – which herbs and extra flavours such as lemon zest or dried garlic. The options are limitless. If you grow herbs, this is a great way to use up a surpless supply. After all this rain, our herb plants are all flourishing so it was a great time for me to make herb salt.
Home-made herb salt is also a great gift idea. Package it into an attractive bottle, add a little material cover and a ribbon and you have something unique to give.
Make your own herb salt
This recipe does not contain exact measurements as it is made according to taste and availability of ingredients. Such a fantastic condiment to have on hand as it lifts everything from snacks and dips to meals. Also a great gift idea which is unique and useable.
Use herbs such as parsley, rosemary, basil, oregano, sage, thyme, mother of herb, sorrel, chervil, savoury and dill.
Ingredients
- A large bowl of cut, fresh herbs - Use whatever you have on hand but be aware that if you use more of one herb, that flavour will dominate.
- The yellow peel from a large lemon. Avoid the white pith. - This is optional as it will add a lemon flavour to your salt
- 1 tsp garlic granules or flakes - You may wish to slice your own fresh garlic.
- Approx. 1/2 cup Celtic sea salt - This can be adjusted to taste
- Optional extras to be added with discretion - - smoked paprika, sumac, chilli flakes or powder
Instructions
- Lay your herbs out in a dehydrator and dry on medium heat for 6-12 hrs. More delicate herbs will take less time so check periodically and remove as needed. Alternatively, herbs can be dried in the sun. Place on a large baking tray and leave in a warm, sunny place.
- Remove leaves from woody stems of herbs and add to a blender with the remaining herbs, lemon peel, garlic and salt.
- Blend until you have an even powder.
- Pour into a clean jar and use as required.
