We have chickens and so most of the time, we have plenty of eggs. However at the end of this winter when they were having a break from laying, I had no eggs and I had a new waffle maker. We had already tried waffles made with eggs and loved them but when we made them without, they were the hands down favourite. As my son pointed out, he doesn’t want the egg taste in something that he is eating with fruit. Fair enough.
What I used instead of eggs was a flax egg. This is simply ground flaxseed (AKA linseed) mixed with water. It forms a gel. A great plus for ground flax is that it helps to regulate hormones so a great addition to your diet.
The texture of these waffles is super light and fluffy with a crunchy shell. Perfect!
I have actually made a savoury version of these as well which was equally delicious. I added chopped fresh herbs, salt, garlic powder and savoury yeast flakes. That recipe will be coming soon as it is also worth sharing.
These waffles also freeze really well. Use a toaster to reheat them and they taste like they have just come from the waffle maker.
Sensational Waffles
These waffles are so light and fluffy and have a really crunchy crust. They are delicious with fruit and maple syrup or coconut yoghurt.
Ingredients
- 1 cup tapioca flour
- 2 cups almond flour - (blanched almond meal)
- 3 tsp baking powder
- 1 tbsp protein powder - optional
- 1/3 cup oil - You can use coconut, macadamia or light olive oil
- 1 flax egg - 1 tbsp ground flaxseed mixed with 3 tbsp water
- 2 tsp vanilla extract
- 1 1/3 cups almond milk
- 1 tbsp maple syrup
- 2 tsp apple cider vinegar - This is important for the rising aspect
Instructions
- Turn your waffle iron on to pre-heat.
- Make sure your flax egg is pre-prepared to allow time for the gel to form.
- Blend all dry ingredients in a bowl or mixer and then set aside.
- Add the flax egg to all of the wet ingredients and blend well.
- Add the dry ingredients to the wet and mix until smooth.
- Pour waffle mix into your waffle iron and bake as directed for your model.
- Serve with fruit, chia pudding, maple syrup, fruit spread or coconut yoghurt.
Note: these freeze really well. Just pop them into the toaster to reheat.
