This is one of our favourite quick meals. Za’atar is a delicious Middle Eastern spice mix made of sumac, sesame seeds, thyme and cumin. You can mix up your own and keep it as a delcious seasoning, otherwise you can buy it in many delis and spice shops. The mixture of the roast veg, haloumi, fresh greens and tangy balsamic glaze is heaven!
Haloumi and Middle Eastern Vegetables
This delicious sheet pan meal is packed full of taste and goodness. So quick to prepare and your whole family will love it.
Ingredients
- 4 peeled potatoes - cut into chunks
- 1 large peeled sweet potato - cut into chunks
- 1 large capsicum - cut into quaters
- 2 red onions - peeled and quartered
- ½ head of cauliflower - cut into florets
- Wedge of pumpkin - peeled and cut into pieces
- 1 large eggplant - cut into wedges. Peeling optional
- 2 tbsp. olive oil
- 2 tbsp. za'atar spice mix
- 1 tsp. sea salt - if zaatar is not already salted
- 180g Haloumi, sliced
- 2 cups baby spinach
- 2 diced tomatoes or a cup of cherry tomatoes
- Balsamic glaze to dress.
Instructions
- Preheat the oven to 180 degrees and line a baking tray.
- Place all vegetables into a large bowl.
- Add the olive oil, za'atar and salt (if using) to the bowl of vegetables.
- Toss to coat and place on the tray and bake for approximately 45 minutes (time will vary according to the size of your harder vegetable pieces).
- When vegetables are nearly done, pan fry the haloumi in a little olive oil.
- Remove the tray from the oven and add the haloumi, baby spinach and tomatoes.
- Drizzle with balsamic glaze and serve.
