If you eat fish, this is an excellent, fast meal that will meet all your nutrient needs with a host of delicious flavours. If you are vegetarian, replace the fish with tofu strips.
Honey Mustard Fish and Vegetables
A fast meal, very little washing up, packed with nutrition and flavour. What more could you ask.
Ingredients
- 4 peeled potatoes - cut into chunks
- 1 large sweet potato - cut into chunks
- 400g pumpkin - cut into chunks
- 2 cloves crushed garlic
- 1-2 tbsp. olive oil
- 2 tsp. sea salt, lemon pepper or herb salt to season
- 1 tsp. Dijon mustard
- 1 tbsp. honey
- 1 large clove crushed garlic
- ½ tsp. ground turmeric
- ¼ tsp. black pepper
- ½ tsp. sea salt
- 1 tbsp. olive oil
- 4 white fish fillets
- 2 large handfuls green beans - trimmed
- Lemon wedges to serve
Instructions
- Preheat the oven to 180 degrees and line a large baking tray with baking paper.
- Place harder vegetables into a large bowl and add the olive oil, salt and crushed garlic.
- Toss to coat and distribute vegetables onto the baking tray. Reserve oiled bowl for later.
- Place tray into the oven for approx. 45 minutes. Cooking time will depend on the size of your vegetable pieces.
- Prepare your fish marinade by combining the mustard, honey, garlic, turmeric, pepper, salt and olive oil.
- Toss the fish through the marinade and cover. Place in the fridge until it is time to cook.
- Toss the green beans in the leftover oil and salt from the potatoes. Leave to stand until it is time to cook them.
- Once the harder vegetables are just about ready, turn the grill on.
- Place fish and beans onto a separate lined tray.
- Grill until the fish is cooked. Time will depend on the thickness of your fish pieces. Usually, white fish of average thickness will take 10-15 minutes to cook through. You may choose to turn it halfway through the cooking time but this is not usually necessary.
- Before serving, squeeze lemon juice over the fish and beans.
