Greek Quinoa Salad

This salad uses protein filled quinoa and chickpeas with flavours associated with Greek food; lemon, dill, parsley, feta and red onion. It is a substantial salad making it a suitable meal. Great for school lunch boxes too!

Roasted Vegetable Lasagne

This one is a great winter meal. I find it a lot easier to whack most of the filling ingredients into the oven  rather than standing over the stove, frying off onion and garlic etc. Feel free to vary the vegetables you use too.  

 

Colourful Bean Salad

Today I took the kids to the skate park and I needed a packed lunch. We rarely do sandwiches and I needed something filling and nutritious. I served this with boiled eggs from our backyard chickens.
